Aw, nothing against Zebco and I may not know what a Dock Demon actually is. I thought a Dock Demon was a spin cast reel on a 3' rod. Can't see using one myself. Though in context of a cruise ship you might be on to something.

I used CE Smith guide posts for a long time with no issues. Might check that brand out on eTrailer. If you are otherwise happy with the existing side bunks, you could cut a bevel at each end to eliminate the chance of catching anything.
