A basic toggle switch is the place to start. With a boot over the toggle the switch will stand up to splash and dirt. I prefer quality crimp connectors and a quality tool to crimp them.
I would go for a clean up and long term restoration. This boat has all the looks and is in really good condition. There are people on here that run older motors that you should get involved with. Don't fear the pulley steering, I installed it on a boat to save cost and it worked just fine.

Today was aluminum covers for the under seat foam flotation. The original was steel and it rusted something awful. I am using a wrap around with minimum sharp edges. New wood is pressure treated. Electric shears are incredible to use instead of sheet metal shears.
Wow that worked good. Here is a pic of the missing rivets. I punched them out, used a step drill to clean the holes, wire brushed faces both sides, then installed new rivets.
The seats are out and I have stripped them down ready to rebuilt.
