More room is aways a good thing. Probably could use some aluminum angle to make a rib to hold the middle together. Would keep it open still and if you don't tig weld Bolts and washers would be just fine. You know with the middle open the sides would be a great place for rod storage. Also a long...

That's a good question about the middle. I see three options, cooler, live well, and or seating. Or what about a combo? A ice chest with a live well option, with a padded top for an extra seat. Then on the sides a couple of speakers.

Yes you will, the sides of boat will flap when you hit waves. Need to incorporate that area into your design.
