I'm looking at starting my first project boat. Mainly going to be used as a fishing/hunting boat.
I'm wondering if this style hull would be good for putting a deck on.

I guess I'm looking for a 14-16' semi-v.

Any suggestions on boat make/models that have been more popular than others?

Well here is what I was thinking about...

14' Lund 48" on the bottom, 64" beam, 20" sides.

If you mean the area up front for running a trolling motor, why not. If you mean the whole boat, I would say no. You want to keep the center of grav. low I would think for hunting and fishing too. I had a 14ft lund, nice boat, although mine was a 20 inch transom which I preferred but I like the layout of your boat, mine was just benches.

Lunds are excellent boats and I love the layout of the one you found. What kind of fishing do you plan to do and with how many people? I'm no expert but I like a boat able to hold plenty of weight so I'd ask what's the maximum weight capacity of that boat? My 14' can fish 3 but with tackle and a live well, plan on no more than 2. Love the boat your found...if a good deal I'd go for it. Great starter boat.
