Most people want a bigger boat, seems like you just want to make it easy on and off the trailer. Maybe a few pointers on different techniques to launch and recover. Watch some utube videos on it, there are quite a few.

Oh man, a big jon boat is exactly what I'd love but they very rarely come for sale in the Northeast. If you downsize let me know if you want to sell it!

In response to your question, I use my canoe quite often even though I have a deep V flat floor with a side console. So there is certainly a case to be made for smaller boats.

Bunk slicks, side guides, depth of trailer in the water?
You should not have too much problem launching, and loading that boat back on the trailer. It can get a little tough if the launch is very shallow, but there are ways around that too.
 
Guide ons are a BIG help when loading...on windy days wouldn't want to be without them.
 
What exactly is the problem? Can you post some pictures of your boat and trailer?
