It's official. I'm a french chef now! This is my my version very loosely based on a Croque Madam sandwich. Inside the low carb tortilla is mustard, ham, home-made dill sauce and Mexican style grated cheese. I know that the real thing uses mornay sauce and Gruyere cheese. I made the substitutes because I don't know how to make mornay sauce and don't even know what Gruyere is. So, I'm going to call my version "Croque Ldubs". Pretty tasty if you are looking for some variety in a low-carb diet. Basic recipe: This dill sauce is simply sour cream, mustard and dill mixed together. "Toast" the low-carb tortillas in a skillet. Cover the outside with a little butter. Spread mustard on the inside. Put ham, dill sauce (or whatever sauce you want), and the cheese. Fold it closed and put sauce on top. Put in 350 oven for 15 minutes. Put an over-easy egg on top when you pull it out of the oven. Then, Voila!
