Sorry to hear about your Dad. I hope he gets feeling better!

Did you use pressure treated plywood for the seat replacement? That stuff will not go nicely with the aluminum if that's the case. That's my only concern.

For Seat prep - you will want to water proof it. 3 coats of Spar Urethane should be fine. If you plan on laying down carpet, I just read on here that Henry's 263 is a good adhesive product for the carpet. As for carpet the Marine carpet is gas resistant.

Yes i used pressure treated plywood but no plywood is touching the boat . It is all supported by treated 2x2 . The floor and decking is removable if need be . Probably just paint no carpet .

I think Rustoleum has an anti-slip rattle can spray that would probably be fine, but not sure what your color options are if you used that. Likely any paint will do, and if it gets scuffed up - you can just reapply.

If you are going to catfish it, I would suggest a vinyl covering lile Nautalex instead of carpet. Scrub it down with soap and water and it's ready for the next trip. Carpet is great for the bass guys who catch and releash because a fish never hits their carpet, but once that slime starts setting in, it's going to get pretty hard to clean.
