Plenty of people have done away with the middle seats on their boats - just add bracing up to the same point (or higher) on the sides of the boat. Without getting nerdy, if you try to keep the brace at a 45 degree angle to both the side & bottom (as much as the non-triangular shape of the boat will allow) you should do alright.

I've seen v-hull builds where guys run storage areas along the irregular section of the sides above their flat floor line and conceal the angled bracing within the storage - comes out looking very clean while still giving you the rigidity you need to handle waves.

Well I have the luxury of keeping mine in the garage thank god, I might wait till winter to remove seat I'm gonna have to remove the brackets and rivets to put in a brace
 
I have a cover on mine when it's not in use - but last I was in it the fishing was out of this world and the rain had me soaked to the bone. It isn't only during storage that it'll take on water.
 
All comes down to the other boat traffic. Shouldn't be a problem unless you're on a very busy lake with large wake throwing boats.

From what you describe as your home waters, you're not going to have much flex at all. I wouldn't worry about bracing. That seat was made to be easy to remove, so taking it out for the space is easy, and putting it back, easier still. But seating three folks is going to be harder without it. :)

The boat is more flimsy but nothing that will make it sink so I will see how it does without it might just keep it to put in or out depending where I fish
