First had this at my ex-in-laws house. When I take it to a cook out, I have to make two.
Mexican Cornbread
1 cup Self rising Corn Meal
1 cup Shredded Cheddar Cheese
1 can Creamed Corn regular size
2 can Chopped Green Chilies (drained)
1/2 tsp Baking soda
2 Eggs
¾ cup Milk
1/3 c Butter, cut into small pieces
Mix all ingredients
Pour into GREASED 8x8 baking dish. (do not use metal pan!!!)
Bake 30 – 40 minutes in 375-400 degree oven
