One of the thing I always do when making Chili is to double the tomato to bean content. This way You can make different size batches and it come out similar.
Usually 4 cans tomatoes, 3 diced, and one whole tomatoes, cut into 1/2, or 1/4's. Two can's chili beans.
Usually two medium onions, and 2lbs or so of meat.
I like Carrol Shelby's chili mix, but like to just add salt, pepper, and a BUNCH of dark chili powder.
One thing nice about doing it in a crock pot is it cooks down nice and thick, and become GREAT chili dog chili.
