I was gifted this 12-footer. This is my first project and I would like to hear from others on where to start. Nothing beats experience. Thanks fellas

Three things. Keep it light, keep it light, and keep it light!

If you can ID the boat and find pics of the original, that would be a big step in bringing it back. On a 12' boat I personally would not go beyond adding back the bench seats.
 
I'd start with a leak test. I did mine at the local lake. I put it in the water up against the shore (just deep enough that I could stand in it without the boat touching bottom), climbed in, and watched for water coming in. If you have a pool, you could probably do it that way, but I didn't want to have to fish mine out of a pool if it started going under.
