Say the drain plug came out while on the water. Can a bilge pump take the water out as fast as it comes in? #-o

I mean like in a 12 or 14 foot Jon.
 
It would be close but I think your drain plug would wind up winning that one. Much depends on how many gpm your bilge pump is.

I used the "drain while on plane" method in my 1448 when we are getting in and out of the water fairly often and dragging half of the lake back in with us.

We used to put signs around the ship that stated "How long can you tread water!?". Sitting still, I do believe, as stated above, that the drain would win.
