And if there are any catfishermen in here they will know how slimey catfish are and how nasty a boat can get real fast. 1st and foremost I want to at least get rid of the carpet and possibly the wood, I am not sure what kind of wood was used or if there is a way to seal it up enough that I might be able to use a rubberized truck bed liner material on the wood itself. What are my material options to replace all the panels, decking, flooring and storage doors, should I go with something that is not wood? I would love to do a non skid surface that I can add a drain to so I could just hose the boat out when it gets nasty. Here is the boat, any suggestions welcome. The only place I would consider leaving the carpet would be on the sides of the boat, but definitely on NONE of the flooring, deck or panels.

I saw some boats that have some type of vinyl but they have it glued down to aluminum. I would think you could glue it to wood. Someone else would be able to answer that question better.
 
The marine vinyl is very easy to maintain and the product I like most for a tin boat floor. I've tried rubberized paints and others, I prefer the vinyl. Had it in my latest 2 boats. Cleans easily, even holds up to pressure washing, non-skid, fairly in-expensive, deadens noise (some), easy on bare feet, and weighs next to nothing. It can be glued to anything, like carpet.

If it were mine, I'd remove all carpet, paint the side-walls, and vinyl the floor and decks. Just be warned, removing the paint and especially all the glue residue is a major project.
