This picture is the covered bow of my boat. It's not going as far back as the one you've got, but the age of the boat is the same (old) and what you're describing sounds to me like cutting the bow back to something like what I've got. I'm clearly biased, but I think you can do this up really well. Another thing in your favor is that the cruising style boat you're looking at is usually better built than the plain utility V's, rated for higher hp, and maybe starts with a flat floor inside?

Fish fry mine is covered like that well it was anyway! I'd say that 11' of the boat is relatively flat. I'll have to get some real pics from above. This seriously should be an easy project. It has alot of potential due to its overall size but the depth of it is awesome.
 
Well here it is so far. More pics to follow. Wife thinks a deck on the entire length would be even better. I'll get the front done then move on from there

The third pic has the tape measure showing 30", deeeepV. Not sure where you see a problem, it's a good bit deeper than my boat though. I have around 24" top to bottom at the deepest point. You have lots of space to build in storage if you deck the whole boat.
 
I see a level..maybe where your bracing connects in the bow is on a angle(crooked)?,just a guess.Can't really see in the picture.
Looks pretty study though.
 
Zum got it. Um sorry though there is no prize :cry: . About the trailer this one had my john boat on it. I haven't fully transformed it to fit this boat properly yet.
