Hey I have a G3 1648 boat that I'm about to do a little work to. I want to lay carpet and deck the back out. I'd like to cover the sidewall ribs so it's flush when I carpet. What's the best way to go about doing it.

Aluminum sheet metal would probably me your lightest but most expensive option. Wood is the heavier but cheaper option. It isn't going to add that much weight but you will notice it. What are you pushing the boat with?

I've loaded this boat down with 4 people and about 200 lbs worth of duck hunting gear. I lost maybe 2-3 mph top speed. It's strictly a fishing boat now, so no more than 2 people and a few poles. If wood is the cheaper route vs aluminum/lighter route, I'll use wood. Would 1/2 inch work? Seal it up before carpeting?

That's what I did with mine, 1/2" as long as you have good support for it. I sealed with an auto grade fiberglass resin, after it dried I was impressed with the seal on it big time. I'm gonna go right now and carpet mine in about 10 minutes. I'm doing the wood in pieces and putting them in like panels with rivets so they could be removed in the future if I wanted. I've come to find out there's not many wrong ways to do some of this, just personal preference and some ways last longer than others.
good luck!
