I have an old aluminum mod v that is ready for paint. The boat isn't perfect, has a few dings and dents. Typical for the age is assume. My question is since the boat as many imperfections would it be best to roll it on, use spray cans or air guns for the best finish? Thanks!

In any case the paint will not fix imperfection maybe fill tiny pinholes but if it's dented and you paint it it will have a dent with paint on it. Use whatever methods you feel most comfortable an you will have good results( most likely) besides the fish won't mind and the bottom of the boat looks just fine from the casting deck

Try to use a sprayer if you can find one. Even a Wagner does a darned good job if you keep the paint thinned enough. The HF Purple large HVLP spray gun is actually a darned nice gun if you have an air compressor big enough to drive it. You can't really get a uniform finish with a roller and it's hard to get full coverage in the nooks.
Remember this. Bright colors like Red, Black and similar tend to accent the dings and really magnify them. White is a great color in any tint and so is Gray. Both tend to hide dings and look a lot better . They both hide the dips and swoops that make a fresh paint job ugly so often.
