Here's the catfish I made the other night..
It was two big fillets from the cats we caught jug fishing in late June. One blue, one channel fillet.. I cut them up into small pcs. to make it easier to cook and eat.. I think we both ate about 3 helpings each, and I've still got enough to warm up for lunch.
I cut the chunks up into basically bite size pcs, soaked them in a bit of vinegar hot sauce for 1/2 hour, and then drained and cracked a couple eggs into the bowl.
I made up a mixture of mostly corn meal and a bit of flour, some BBQ rub mix, seasoned salt, and pepper..
I took them straight out of the egg and into the coating, getting enough to get a good layer of coating.. Fried in canola oil until lightly brown..
It was hard to stop eating them..
And what they looked like earlier.. :wink:
