Ant "neat" way to store/deploy my bow and stern anchors/line on smaller boats? Was thinking of getting like an Attwood anchor crank, but not sure if that's the right answer. Suggestions for a 14 footer?

This answer may not be what you're looking for but may give you an idea.
My anchor gets stored in a Dewalt tool carry bag with all the rope I need in there too. I feed the rope into the bag by just looping it in and then I place the anchor on top. This way it always feeds out well and doesn't get tangled.
After the boat is out of the water, I leave the bag open to allow the rope to dry. Usually it will mostly dry up on the way home.

I use a plastic trash can under a hatch cover. The can has numerous holes in it for air circulation. Lay the rope loosely in the can as it is pulled in and lay the anchor on top. No issues when deploying the anchor and line. Leave the hatch open to dry the line. Have one at bow and another at stern. However I find using an anchor is becoming a rare thing as I now have spot lock on my trolling motor.

I use a heavy duty vinyl dry bag. Out of the water I store two anchors & lines and two dock lines in it. On the water, the dock lines are always tied to the bow & stern, I place a smaller mushroom anchor & line at the stern and keep the larger anchor & line in the bag up front. I keep the stern anchor line wrapped up until I need it. But even after I use it, it’s not in the way when I retrieve & coil the line below the transom. I’m in salt water often, so I always rinse all the anchors, lines and the bag out at home. They dry quick in the Florida sun, then I store it all back in the bag for the next trip.

HI
I have one of those canvas buckets like the linemen use as tool bags. I coil the line in as the previous poster described, and the anchor and chain go in on top. Looks sufficiently nautical too.
And if you should want to slow drift across a lake baited with a shrimp for catfish, the bucket does double duty as a handy sea anchor.

... yea it's a bit kludgey but it works great.. I can from the stern.. all the way 12ft back, remotely release and retrieve my anchor.... and it's yellow cuz I stubbed my toes enough !!
As long as it works! If I'm fishing in the boat I'm usually anchored. Pulling it up and dropping it down again in the next area by hand is a pain. A lot of times over 20' of water. A crank up system may work.m for me.

!!! "OVER 20 feet" ... oh my... naw..none of that deep water stuff for me ...anymore...I like to drift the back bay.. sometimes with the anchor down a few feet to slow my drift.. never in deep water.. did 'nuff of that !!!

I put a crank set up on nearly all my boats, it saves tripping over seats and tackle boxes to get at the anchor, and being able to turn a knob and drop anchor while watching the fish finder is nice too.
I put an electric anchor winch from a pontoon boat on my 17ft boat and want to either find a deal on an anchor pole for the stern or maybe make something myself.

On the boats with a hand crank winch, I put rope guides down along the gunwale on the right side, that way there's never anything in my way when bringing in a fish.

"Back bay fishing can mean a lot of things, here we have back bays that are 2 to 10ft deep and a few that are 8 to 50ft deep near the shipping lanes.

That deep water can hold some big fish.

Yer not kidding anyone here.. from what you have made, said, and done already ... you can't help yourself you will make something better.
And we probably fish the same ditch (ICW) .. very noisy with go fast boats and big waves.. hell it could spill my beer !!!
