I'd probably mount it on the front side of the operator's bench. Usually the rule is to be within easy reach of the operator while underway. It also depends on your own state's regulations - some have their own variations specifying where it is to be mounted.
 
I have a Tracker grizzly 1860. I mounted mine to my rear deck in the corner at the hull. I initially mounted mine to my center console, but it got kicked off to many times.
 
I have a Tracker 1648 and here is where I mounted mine.

The extinguisher on my Grizzly 1754 SC is mounted to the floor right under the front edge of the drivers seat. Does not get in the way of your feet.
 
Thanks for the great ideas! I mounted it on the flat area next to the operators seat. Out of the way but easy access if needed.
