I need to add a trolling motor plug for my 101lb thrust 36volt bow mount foot control. The ones I have seen are obviously male/female but have three wires on both ends. My trolling motor wires are just one black / one red.

What's the third wire on these plugs for????

I think this is why. I only use 2 wires on my also.

the plug has 3 wires to give you the 36 volts
what you will need to do is have 2 sets of wires running from your battery area to the plug
you will place 2 of the batteries in series to give you 24 volts on that one set of wires then
the other battery will go forward as 12 volts
you will wire the plug as the instructions say for the 24 volt setting
but having 24 volts on one set of wires and 12 on the other will give you the 36 volts at the plug
 
I would do a little more research on the three wire plug before I did it like that. I looked in the MotorGuide installation instructions and it shows three batteries wired in series to get 36V and only two wires going to the trolling motor. I would see if I could find the website for whoever made the switch and see if there is any tech info on their site, if the plug did not come with instructions.
